Gazpacho (The Best Ever!)

This recipe is from the first cookbook that I ever bought for myself.  It is the best gazpacho that I have ever had, and I am a fan.  Fresh tomatoes, and summer veggies…what is there not to like? The cookbook is “Moosewood Cookbook”, and it was published as a response to the overwhelming success of the Moosewood Restaurant, in Ithaca, NY.  Here is their website.

Here is the recipe.  My oldest daughter does not like the vinegar, so feel free to eliminate that ingredient.  It does add a degree of difference from the norm, and I like it, but experiment.  Enjoy.  Bon appetit!

4 cups cold tomato juice                                                 1 small minced onion

2 cups freshly diced tomatoes                                        1 cup green pepper

1 tsp honey                                                                     1 tsp chopped garlic

1 diced cucumber or 2 pickling cukes                             2 green onions (scallions) chopped

juice of 1 lemon and 1 lime                                             2 Tbls wine vinegar

1 tsp. tarragon and basil                                                 dash of ground cumin

1/4 cup fresh chopped parsley                                        2 tablespoons olive oil

salt and pepper to taste

Combine all ingredients.  Chill for two hours.  Enjoy! Bon appetit.
