Gazpacho (The Best Ever!)

This recipe is from the first cookbook that I ever bought for myself.  It is the best gazpacho that I have ever had, and I am a fan.  Fresh tomatoes, and summer veggies…what is there not to like? The cookbook is “Moosewood Cookbook”, and it was published as a response to the overwhelming success of the Moosewood Restaurant, in Ithaca, NY.  Here is their website. http://www.moosewoodcooks.com/

Here is the recipe.  My oldest daughter does not like the vinegar, so feel free to eliminate that ingredient.  It does add a degree of difference from the norm, and I like it, but experiment.  Enjoy.  Bon appetit!

4 cups cold tomato juice                                                 1 small minced onion

2 cups freshly diced tomatoes                                        1 cup green pepper

1 tsp honey                                                                     1 tsp chopped garlic

1 diced cucumber or 2 pickling cukes                             2 green onions (scallions) chopped

juice of 1 lemon and 1 lime                                             2 Tbls wine vinegar

1 tsp. tarragon and basil                                                 dash of ground cumin

1/4 cup fresh chopped parsley                                        2 tablespoons olive oil

salt and pepper to taste

Combine all ingredients.  Chill for two hours.  Enjoy! Bon appetit.
