Blueberry Crepes

Crepes

1 1/3 cups milk
3/4 cup flour
2 eggs
2 Tablespoons honey
1 Tablespoon lemon zest (grated peel of a lemon)
1 teaspoon vanilla extract

Blend all of the above in a blender. Heat a non-stick skillet to medium heat. Put a small amount of butter to coat, and pour 1/3 cup batter into pan. Be SURE to let cook enough. Don’t be afraid. The batter will look like my picture, and then will flip easily. Everyone’s first one is undercooked:)

Filling

1 pint blueberries
1/4 cup honey
1/4 cup of orange juice
Cook until berries start to break down (about 3 minutes)
Then add a mixture of 1 Tablespoon of cornstarch and 1/2 Tablespoon of cold water to stiffen.

Building
Crepes + Filling + Plain Greek Yogurt (about 2 cups)

You should get about 6+ crepes. Get a spatula and spread a layer of the yogurt on each. This is to taste, so if you like a lot of yogurt, have at. Put 1/4 cup filling for each crepe. Fold them the short way first, and roll. Dust each crepe with powdered sugar and a teaspoon of blueb erry sauce on top for decoration. I put each one in the microwave for about 10 seconds to get them all to be the same temperature.
